Make mayonnaise in a blender

The question of how to make mayonnaise by hand, with olive oil, is often asked, but it’s the wrong question really.

The answer, of course, is that, if you want to make mayonnaise at home and you  want consistent, successful results then you don’t make mayonnaise by hand!

You can make mayonnaise in a Vitamix, if you’re lucky enough to own one – a lesser food processor will usually do the job too. But if you really want to know how make mayonnaise from scratch, at home, then you’ll be wanting olive oil and a stick blender.

Yes, no matter how fancy your blender or food processor, you’re actually much better off making mayonnaise with a stick or immersion blender.

And you will want to make your own mayonnaise if you’re going paleo!

Olive oil should go without saying, although you might consider avocado or macadamia nut oil. I personally recommend olive oil, but not the extra virgin kind – you need a light, mild oil to make mayonnaise. Seriously, don’t use the extra virgin olive oil, it won’t be good, the flavor gets greatly exaggerated in the blending and will be unpleasantly bitter.

So, how does it work? And what else do you need?

Ingredients for mayonnaise

I large egg (or 1 egg yolk and 1/2 cup water)
Juice from 1/2 a lemon
I cup light/mild olive oil
1 teaspoon dijon mustard (optional)

How to make mayonnaise

The science behind it, and the video, come from the Serious Eats Food Lab – it’s pretty awesome to see. NomNomPaleo had a lot to say about how to make mayonnaise too.

It goes like this…

Place egg lemon juice, and mustard in the bottom of your stick blender jug. Carefully pour the oil on top and allow it to settle for 15 seconds. Place head of stick blender at bottom of jug and switch it on. As mayonnaise forms, slowly tilt and lift the head of the blender until all oil is emulsified. Season your mayonnaise to taste with salt.

Homemade blender mayonnaise should keep in a sealed container in the refrigerator for up to two weeks, but let’s be honest, It’s never going to last that long!

Mayonnaise flavors

When you make your own mayonnaise in a blender it’s going to be delicious, but why stop there? Get some more flavors going on!

Cilantro/coriander and lime mayonnaise
Mix half a cup of mayo with 2 tablespoons of minced cilantro and a teaspoon of lime juice

Homemade Garlic mayonnaise
Mix in a clove or two of crushed garlic, either while blending or afterwards

Smoky mayonnaise sauce
Mix half a cup of mayo with 1 teaspoon of smoked paprika and 1 tablespoon of lemon juice

Indian raita style mayo sauce
Mix 1/2 cup mayo, 1/2 cup coconut milk, 1 teaspoon garam masala and 2 tablespoons chopped cucumber

Healthy mayonnaise!

As soon as you get the hang of making mayonnaise with a stick blender, which should be the first time, it’s that simple, you’re probably not going back to store bought mayo. And this is a good thing! Most commercial mayonnaise is made from canola or soybean oil, or some other dubious vegetable oil, even most of the ‘olive oil mayo’ on offer is mostly veggie oil.

It’s not good for you.

Not to mention the sugar, cornflower and who knows what else you find in some brands.When you make your own mayonnaise you know it’s going to be good for you.
