Spicy Paleo Cauliflower Rice recipe

Cauliflower rice? Yes, really!

You’ll not be surprised at this if you see plenty of paleo recipes – everyone seems to have a cauliflower rice recipe these days, and not surprisingly, because it’s so good! It’s one of those truly paleo dishes that really works.

Cauliflower pizza base – not so much if you ask me, but cauliflower rice – deffo.

So how does it work?

Simples. You blitz your cauliflower into rice sized bits and give it a quick blast of heat. Done.

What?

You wanted more? Like a proper instructions? Oh okay, I’ll toss my cauliflower rice into the skillet too…..

Spicy Cauliflower Rice Recipe

I like to serve this with curry – it’s a versatile beast, just like rice rice, and can be flavored or plain according to need, but here we’re going with some Indian flavors.

Ingredients

1 head of cauliflower
1 medium onion
2 cloves garlic
1 tbsp ghee or coconut oil
1 tbsp garam masala / curry powder / cumin, coriander and turmeric

How to…

1. Roughly chop the cauliflower into florets, discarding the leaves and core. Pop into your food processor in smallish batches and pulse until it’s in rice sized pieces. Don’t over do it or it’ll turn to mush – we’re going for cauliflower rice, not cauliflower mash here, that’s a different recipe.

Also, if you washed your cauliflower then be sure to dry it well before processing.

2. Heat the oil or ghee in a large frying pan and fry the onion until translucent. Add the garlic and your choice of spices. Give it a good stir, fry for a minute, and then add the riced cauliflower.

3. Let it cook, stirring frequently, for 5 – 10 minutes until it’s somewhere between tender and crispy – think ‘al dente’.

And that’s it! Season with salt and pepper if you will, and serve spicy cauliflower rice beside your favorite paleo curry – this one perhaps.

Variations

Don’t want to fry? Spread it on a baking sheet and pop in a medium oven for 15 minutes, give it a good shake or flip at least once.

Don’t want Indian cauliflower rice? Try it Chinese egg fried style (scramble a beaten egg into it when cooked), or make it lemony with some lemon zest and juice. Or just plain of course, it’s not that it needs dressing up, just that you can.
