Paleo Ice Cream? Really? Yes really!

Now I appreciate, for the purists, that the average hunter gatherer, living in a cave, Paleo Mama didn’t have access to a food processor. Ice, maybe, but not the food processor. But hey, get over it – this is ice cream – paleo ice cream – with no sugar and no ice cream maker required!

Yep, you heard it…

Easy Ice Cream

So let’s get into it.

This is a super simple way to make ice-cream without the need for an ice-cream machine and still achieve a lovely, creamy product. You will need a food processor, frozen fruit, nut butter and if desired, a sweetener like coconut nectar or raw honey.

As a general rule I use these ratios:
300g frozen fruit: 200g nut butter (give or take 10g): 2-3 tbs sweetener (optional)

If you are making your own nut butter, aim for a consistency similar to a bought product (it should be very soft and pastey). If using almonds you will probably need to add around 4tbs macadamia oil, however if using macadamias you won’t require any. Simply blend the nuts in the food processor until smooth and creamy, adding macadamia oil as required to achieve the correct consistency.

Have the butter ready to use before you begin the ice-cream.

In a food processor, blend the frozen fruit until smooth. Add the butter and process until well combined and creamy. Taste and add a sweetener if required.

This trio is:

Cherry and Macadamia nut Ice-cream;
Banana, Hazelnut butter and cacao ice-cream;
Red paw-paw, vanilla and Almond butter ice-cream.

Paleo Ice Cream variations?

How about cherry, vanilla extract and choc chips? Or banana with almond butter? Add some raisins or coconut flakes?
